Gluten Free and Keto Friendly Mini Waffles
Guess what day it is! It’s Waffle Wednesday! Oh that’s not really a ‘thing’, you say? It should be! I made some delicious make ahead waffles and I wanted to share the recipe with you. Here’s the best part: They are gluten free and keto friendly!
You’re going to want to separate 5 eggs. In the bowl with the yolks, add your almond flour, stevia drops, baking powder, 4 tablespoons of coconut cream (I get mine from Trader Joe’s), and half a stick of melted butter. Mix evenly.
Then you are going to want to add 2 tsp of vanilla. Use the good stuff if you got it.
Now in the egg white bowl, whip until white with peaks. Then, spoon in the egg white and fold in to the egg yolk mixture. Do not overly mix. You want to try to get as fluffy as a mixture as you can.
Just keep folding away and till its a creamy and fluffy mixture.
You know how to do the rest! Put the mixture in the waffle iron and make as many as permitted. I have a mini waffle iron, so mine permitted A TON of waffles from this mixture.
They are tasty, simple, and honestly taste like the real thing.
I ate them plain, but you can dress them how you like.
What’s the damage? 39 calories a waffle. That’s it! Enjoy!
Gluten Free and Keto Friendly Waffles
4 tablespoons of Almond Flour
1/2 Stick of Butter
2 drops of Stevia Sweetener
4 table spoons of Coconut Cream
1 tsp of Baking Power
2 tsp of vanilla
Separate eggs in two bowls. Yolks in one and whites in other.
Whip egg whites until white with peaks.
Add Almond Flour, Baking Powder, Vanilla, Stevia, Melted Butter, and Coconut Cream to Yolk Bowl and mix evenly.
Fold in whipped egg whites by the spoon full until completely folded in. Mixture should be fluffy.
Heat and grease waffle iron of choice.
