Coffee Rub Bacon Wrapped Chicken Thighs

If you are new to my blog, I like to cook a meal that starts with the same letter of the particular day I’m cooking. Well, today is THURSDAY, so I figured I would try to cook something that starts with a TH. I was racking my brain: what could I make? I could cook something with THyme… nah. Maybe I’ll cook something while using a THermometer (get it?)… nah. What on earth starts with a TH? Then it dawned on me: THIGHS.


I chose to make chicken thighs for this lovely Thursday! As per usual, I drove myself to Trader Joe’s to grab some ingredients I didn’t have. At that point, all I knew was I wanted to make chicken thighs. I didn’t know how I wanted to season or what I was going to pair with it etc, but I knew Trader Joe’s would help me.


Trader Joe’s has an awesome coffee rub! It’s only sold seasonally, so go get it while it’s out! I use it on pretty much all of my meats, but I hadn’t used it on chicken thighs yet. I’m so glad I did. It’s such an easy ‘one and go’ seasoning. (PS: This is NOT an advertisement for this seasoning. I’m truly obsessed with Trader Joe’s!)

Disclaimer: I bought way too much bacon the other day at Costco, so my next few recipes are most likely all going to have bacon in it. I thought ‘how can I incorporate bacon in this recipe?’ Answer: EASILY! All you gotta do is wrap bacon around pretty much anything and it’s even better than before.

So I wrapped each chicken thigh with a piece of THICK CUT bacon. I topped it with another great Trader Joe’s seasoning: Chile Lime Seasoning Blend. It adds a little ting! I like my food with a little ting!


BADA BING! Cook in a 400 degree oven for about 15 minutes, then flip each thigh, and cook for another 15 minutes.

It’s truly the perfect easy dinner for diets of all kind (except vegetarians obviously) and I recommend this recipe for any Thigh Thursday in the future! HAZAAAA!

Chicken Thighs

Trader Joe’s Coffee Rub and Seasoning

Trader Joe’s Chile Lime Seasoning

Thick Cut Hickory Bacon


Pre-Heat Oven 400 Degrees

Season chicken thighs with coffee rub on both sides.

Fold each chicken thigh and wrap with hickory thick cut bacon

Place in oven safe dish

Top each bacon wrapped thigh with a sprinkle of Trader Joe’s Chile Lime Seasoning

Place in oven for 15 minutes

Flip each thigh

Place in oven for another 15 minutes

Take out of oven when bacon is crispy


The damage? 310 calories a thigh. NOT TOO SHABBY! (Keto Friendly!)
