SUPER EASY Gluten Free Vodka Chicken Pasta

Happy Monday! I'm just now being able to sit down and work on this post today. This day has been a bit of a doozy so far! We all have those days and today was mine. Do you ever just feel like you can't do anything right? Uh! Sometimes you can do everything your best and still not FEEL your best! It's a frustrating feeling, but I'm excited for the rest of my day. I'm going to my first yoga class at YogaWorks today! I am finally listening to the many voices in my past that have told me to try yoga for my posture and peace of mind. I can't wait to update you all on how that goes! 

The other day, David and I made gluten free vodka chicken penne pasta and it was pretty darn good if I don't say myself! I wanted to share the recipe with you guys, so here it is!

First, You Need Gluten Free Noodles. 

You can't make a gluten free pasta without gluten free noodles! I like the ones from Trader Joes! They have most types of noodles in a gluten free option, but today we chose penne noodles. 

Next, pour in a pot of boiling water, then lower the heat.

Marinade The Chicken in a Garlic Vinigarette. 

I use Trader Joes garlic vinaigrette and it's TASTY. Super cheap too! Grab it by the produce aisle!

Yeah, it wouldn't be called SUPER EASY if I wasn't cutting some corners. I use jar sauce for my vodka chicken. The Trader Joes variety is the best one in my humble opinion.

Choose Tenders.

They cook quick and they are the best part of the chicken anyway.

Cook All The Components At Same Time. 

Don't you hate having to wait for one thing to finish cooking for you to plate dinner? Me too! I try to time everything so it's all done at the same time. Who's with me? 

Stir Your Sauce and Wear a Cute Top.

Okay, the cute top is optional, but please at least wear a shirt. No reason to stir sauce topless. OUCH splatters! I bought my shirt at Kohls and it's from Lauren Conrad's newest collection. Click the picture to get yourself one as well!

Boom. Plate It. 

I put some mozzarella cheese on top of the pasta before I placed the chicken tenders on top. That plant you kept seeing on my stove? Basil. I took off a few leaves for garnish. YUM. What's your favorite garnish?
